Foods to feed Lori (in rhyme prose)

Let’s play a guessing game, shall we? Or maybe a rhyme…

What could this be? Snowy white and speckled green…?

Round and flat and lacking sheen (I’m trying to rhyme here..).

It gets baked a golden brown and cut and topped with items so proud.

The final blow is to pile it high with greens and reds but please don’t crowd.

Bring it altogether and what have you got?

A meal fit for Lori- and oh what a lot!

So, that was pretty much the worse rhyme in the world but it included pictures so I gain a few redemption points for that, right? Yeah, didn’t think so. But here’s what we made…

Chicken Pizza Crust found on a Paleo recipe site. Seriously, great idea. Here’s what we (the boyfriend and I) did to make it:

  • 1 lb package chicken ( I used antibiotic free, grass-fed chicken breasts)
  • 1 tbsp Italian seasoning + fresh chives from our garden
  • 2 cloves of garlic, crushed
  • 2 egg whites + 1 whole egg
  • toppings as you like (we just used salad and some fresh salsa we made with all of the cilantro we’re growing)

Heat the oven to 450 degrees. Boil (or bake) chicken until done, seasoning with sea salt, if desired. While chicken is cooking, mix together the seasonings, crushed garlic, and eggs in a small bowl; set aside. When chicken is cooked through, cut into chunks and add to a food processor, along with the egg mixture. Process all until smooth, or desired consistency for a “crust.”

Line a baking sheet or pizza pan with parchment paper. Place blended chicken mixture onto the parchment and spread into a round, flat, 1/4″ thick “pizza crust.” Cook the crust for about 30 minutes. If using pizza sauce or other ingredients you want heated, place on pizza with 10-15 minutes of cook time remaining.

Extra comments: My boyfriend really liked this dish. I, however, did not. It was dry and flavorless to me, however, adding some oil would have helped bring out the flavor and created a moister vehicle for toppings. This recipe definitely has potential, but just remember, it definitely is not a flour and yeast pizza crust. ;)

Question Of the Day: How do you spend an unexpected day off (from work, school, the usual routine)??? I like to take some extra time working out, or at least sleeping in a little before I hit the weights/trail/etc. I usually spend my time going to various downtown areas- I love to browse small downtown areas, looking at local businesses and boutique stores. And then I relax. I make a nice fresh dinner. And I watch a movie. ;)

I relax and read a lot whenever I get extra time. Or I go out into my garden and make up things that need to be done out there! :D

Interesting chicken crust. I never would have guessed….and probably wouldn’t have thought it sounded good. Although, your reaction isn’t all that reassuring!

well I wouldn’t have guessed pizza chicken crust! good guessing game though; I thought it was just cheese! When I have time off, I extend a run and walk around stores shopping. We definitely have that in common

I cant lie. I was freaked out by the chicken crust at first. I have never heard of anything even somewhat like this. But upon further reflection I can see that it aint bad! With lots of spices and whatnot, I bet it could be good… So different though!
