Keepin’ It Simple: Shaved Rainbow Salad

If it weren’t for Nelly, last night’s dinner never would have happened. If it weren’t for last night’s dinner, my life would be lacking what could have been. If what could have been wouldn’t have been, well, then this post would be completely different. But I did read Nelly‘s post the other day, and I did see her salad, and I did have a huge variety of vegetables sitting in my fridge just waiting to be used, and it just so happens, I found my new favorite dish. And I have to say, this dinner topped most of the dinners I have had in the past few weeks. It was simple and extremely clean, and I think that is part of what made it so damn good.

Let me tell you what, This. Dish. Rocks.

Leftover marinated barbequed eggplants and the Rainbow Shaved vegetable salad, and a side of lettuce, untouched by dressing.

If only you could taste the shaved vegetable salad that was created last night. I wish you could. But since you can’t, the least I can do is provide you with the recipe, right? πŸ˜‰

Step one, check out Nelly‘s post and the site she got it from. Step two, select a variety of colorful vegetables and slice very thin on a mandoline. Above (and added to the finished dish) is fresh, organic fennel, radishes, summer squash, and spiraled beets.

After filling a bowl with the paper-thin veggies, sprinkle with fleur de sel (large chunks of sea salt), fresh lemon and lime juice, cracked black pepper, and a drizzle of olive oil. Toss to coat.

At this point you could stop and eat, but why not, as Emerald Ligasi says, “Kick it up a notch!”?

Throw in some avocados, finely chopped chives, and a few pieces of cilantro. Now you have a salad.

Um. Freakin’ amazing.

  6. t was simple and extremely clean, and I think that is part of what made it so damn good.. That, and the avocado. Because a salad isn’t a salad without avocado. Er, well, it is, but it isn’t a damn good one.
