New Favorite Salad Via Leftovers

Newest installment of our CSA Veggie Box

On Thursday, I posted about my new favorite salad… well, I have an even newer favorite salad, a version of the old, if you will. Really, it’s just the leftovers of the Shaved Rainbow Salad mixed with some veggie box leafy greens, more avocado, thinly sliced sweet white onions, and tossed with Natalie Rose’s Liquid Gold Elixir dressing (leftover from a bbq). So delicious I can’t even being to tell you… well, you get the idea.

And really, if you bake up brussel sprouts (with coconut oil, paprika, cumin, and a splash of apple cider vinegar), you just can’t go wrong. To top it all off, throw on a tiny bit of Umeboshi Plum Vinegar and you’ve got yourself one Hell of a meal.

That brown slab over on the side of yonder plate, some raw zucchini flax flat bread, recipe courtesy of Ani Phyo‘s new uncook book.

Or if you want something a little more… mobile… try filling a nori sheet (lunch on the go!)- good for ya, and just plain good!

What is one form of exercise that you have not tried before but would like to? Why haven’t you tried this one yet?

Yum, the zucchini flax bread looks great, I need to try it.

A form of exercise would be spinning, I haven’t yet because it looks expensive to buy the equipment, haven’t found a gym offering classes, etc.

there are so many types of exercises I’d love to try! i am only held back by my physical limitations, not by my desires. I’d love to try boxing or do more rock climbing someday.

Your salads always look so good! I’ve only been in one group exercise class before (it was Zumba, which I loved!), but I would love to try some other group classes – like spinning and body pump.
