Bananas are a girlโ€™s best friend

Bananas. B-a-n-a-n-a-s. I’m personally not a fan of that song, but I must admit the song is now stuck in my head (and probably for the rest of the day). You can thank me later. ๐Ÿ˜‰

Bananas are a wonder food for many reasons. Being rich in vitamin B6, fiber, vitamin C, magnesium, and potassium, bananas just might be the next “Superfood”. Bananas are superheros all themselves since they can help with weakness and insomnia (from the B6), regulate blood pressure and reduce the risk of high blood pressure and stroke, and can help reduce muscle cramping during exercise (thanks Potassium!). A medium-sized banana provides 400 mg of potassium (11% of your daily value) and contains only 110 calories with 4 grams of fiber. Bananas also contain plenty of carbohydrates and are easy to digest, which make for the perfect pre-workout snack. Oh, and apparently, they can help you lose weight. Who knew? ๐Ÿ˜‰

With all of the wonderful benefits of bananas, it’s just a shame to not take advantage of all that they are capable of… including some awesome meal items.

Great plains of cookies

Yes. They were good. Very good. And yes. I am now obsessed.

Banana Coconut Chip Cookies via Girl Meets Health. Great recipe, people.

Although very uncharacteristic of me, I followed this recipe to a T. The cookies came out great, although a little too moist (next time I will have to reduce the amount of almond milk by half), even though they sat in the oven for 30 + minutes. I will be making these again but with some alterations… more later on this venture.

Banana Ice Cream with floating Banana Coconut Cookies and cinnamon. MMMM...

And you can’t eat cookies without ice cream… Banana Ice Cream

Cinnamon Banana Ice Cream

Into the blender went:

    • 2 frozen bananas
    • +/- 1 tbsp raw honey
    • 2 tsp raisins
    • 1/2 tsp vanilla extract
    • lots of cinnamon
    • a shake of sea salt
    • and ice, ice baby

Blend, blend, blend and pour into a bowl. Top with more cinnamon, a few of the above cookies, and you’re good to go.

  1. How funny, I actually JUST finished eating some of those cookies mixed into a bowl of chocolate raspberry smoothie. It was divine. As are those cookies. Mine came out very moist too but I froze all of the remainders and they are quite delicious partially defrosted! My stash is just about gone now, oh no!

  4. I actually am not a huge banana fan, but I do like them in cookies or bread. Something about banana bread is just…good. I might try these cookies though – they seem like they’d work as raw cookies, too.

  8. yummmmmmm I could not live without bananas, banana ice cream is my favorite though, I like to add a few frozen cherries into it.

  9. Yay, glad ya liked ’em! ๐Ÿ˜€ They are definitely on the moist side, so let me know how decreasing the almond milk works out! Just be careful because coconut flour can tend to make for dry/crumbly cookies ๐Ÿ™‚

    Take care sweetie! xoxo
