Just can’t get enough: Waffles

Waffles. My new obsession. Not sure what it is about them. Is it that warm flaky middle? Those dark rough crevasses? The highs and lows of the terrain? No idea. They’re just good.

It seems (for the last few weekends) that I have been yearning for those golden (well, mine are dark brown), crisp, fluffy waffles. During the week, I can’t wait for the weekend to finally roll around (among other reasons) to make a batch of waffles. Protein waffles of course.

Protein Waffles (Paleo, Gluten & Dairy Free)

Dry Ingredients:

  • 1/4 cup chocolate hemp protein powder
  • 1/4 cup chocolate whey protein powder (not my first choice but it was high in protein, low in carbs, and flavored yummy…)
  • 1 heaping tbsp maca powder
  • 1/2 tsp baking powder
  • pinch salt

Wet Ingredients:

  • 1/4 cup unsweetened apple sauce
  • 1/4 cup water
  • 1/4 cup pasturized egg whites (or egg equiv)
  • 1/4 cup ground flax seed
  • 1 tsp vanilla extract
  • 4 drops chocolate stevia

Mix all dry ingredient together. Mix all wet ingredients together. Mix dry ingredients into wet, until just incorporated, and you’re ready for the waffle maker. 😉

Ready for the World’s best topping? Ready for magic in the making? It’s Monday, I bet you’re ready for a nap. Anyway, I was out of pure maple syrup and needed a quick fix for the topping to my wonderful protein-filled waffles. So, after a quick raid of the fridge, pantry, Katie‘s Cashini recommendation, and laundry room (um, scratch that last one), I came up with this:

Strawhini

single serving size:

  • 5 very ripe strawberries cut up into pieces and mashed
  • 1 tbsp sesame Tahini
  • pinch salt
  • dash vanilla

Mix and dish. Mmmm.

Aside from the amazing waffle experience I had, this weekend was so nice. The boyfriend was out of town camping, so I had the house to myself to cook, bake, clean, exercise, read, and relax. Yes, those are all things I do on my spare time. As Kaite puts it, I’m a rockstar. 😉 And since Sascha (boyfriend) took the camera this weekend, all of these pictures are from my Iphone. Not too bad of pictures either.

So, as I mentioned, I relaxed this weekend. I had a great time attending a weekend CrossFit class, getting a PR in front squats. I ran 9 miles for a half marathon I am running with my sister this coming weekend. I did A LOT of cleaning and gardening, baking, and cooking. And yes, I have a few great recipes to share. One, a muffin recipe, that I think is one of the best muffins I’ve ever had. Get excited! 😉

    1. Hi Gayle- Maca is a powder made from a root. It’s malty tasting and used for energy and hormone and adrenal support. You can get it at Whole Foods or other “specialty” grocers or online- Amazon.com is a great place to find it.

  4. Those waffles look yummy, and sesame/strawberry is a magical combo. I love to see waffles, muffins, etc, that are gluten and dairy free and low sugar (or at least easily made that way – whey protein does bad things to me but I imagine it could be subbed out). Do you know, I’ve never eaten a waffle in my life!? Maybe someday I’ll borrow a waffle-maker and try some of those.

  6. gah that tahini strawberry thingy looks so good (sorry, i hope you dont mind if I call it a “thingy”, I’m at a loss for words when things look tasty!). PR for me, lifted a much heavier weigh and a fitness instructor at my gym said, “damn girl, your strong!”.

  8. thats the cutest little reminder. haha we were all winners in the sperm pool. i actually remind myself about that a few times… i tell people but they think im strange but its totally true. we all one the race!! woot haha.

    protein waffles are the best. theres nothing smarter than adding a little protein to waffles or pancake mixes! it really makes a difference and keeps you satisfied/happy <3

  11. Strawhini! Awesome idea 😀 I’m totally making this!! You sure had a productive weekend and at the same time relaxed and enjoyed yourself. I also had a pretty good weekend. Helped a friend clean out 30 years worth of stuff they have been collecting and had a HUGE garage sale. We made about 400 dollars! lmao Talk about personal best 😀

  12. Hi friend – long time no talk:) So – guess what – I was talking to my massage therapist -and he is opening a MMA studio and looking to start crossfit with an instructor. So funny – but of course – I thought…well – that would be fun. Still have not had a chance to try it yet – since Saturday am is the only ‘first class’ that we can do. But come hell or high water – I am doing it this weekend. I wish I could do the ‘getting started’ on a weekday. PR weekend – when I know that I can spend the time w/ just my husband and daughter.
