Procrastination Pays

In a few ways… let me expand on this…

While most procrastination articles divulge the secrets to beating procrastination, this post will only enhance the possibilities associate with practicing procrastination.

According to Wikipedia (the World’s most useful supply of unneeded knowledge),

Procrastination may result in stress, a sense of guilt and crisis, severe loss of personal productivity, as well as social disapproval for not meeting responsibilities or commitments. (source)

Poo on that… Procrastination helps combat stress, eases any sense of guilt or crisis, and helps lead me into a baking fest of productivity. In your face, Wiki.

Procrastination Muffins

AKA: Tangy Honey-Lime Muffins

This recipe was made for Lauren, and a guest post over at her blog, Whole Wheat or Bust. See it here!

To continue with the baking… or I guess, recipe making, since these were raw:

Zucchini Brownie Batter (bars were going to be made but the batter was too much fun… and I was lazy.)

  • 1 cup shredded zucchini
  • 1/4 cup raw cacao powder
  • 1/4 cup carob powder
  • 1/8 cup raw honey
  • 1/8 cup maple syrup
  • 2 packets of Xylitol packets
  • a few drops of liquid Stevia (optional for sweeter flavor)
  • 1/2 cup raw almond butter
  • 1/2 cup ground flax seeds
  • 1/2 cup oats
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • dash of cinnamon

Mix all ingredients together in a bowl. Taste and adjust vanilla, cacao/carob powders, and maple syrup as needed. Line a pan with plastic wrap (for easy clean up) and place brownie batter into the pan, forming one thick layer. Freeze the soon-to-be bars for at least 2 hours.

Yes, I'm lazy AND forgot to take a picture of the finished bar... but this mess is good enough. πŸ˜‰

Now, these were interesting bars. Not bad, but not terribly tasty either. I think the zucchini toned down the flavor… recipe in progress for now. Let me know if you try it with any variations. πŸ˜‰

And of course, I have several other baked and unbaked items for you, my lovely readers, yet, I forgot my camera at home and have yet to upload the pictures. So, you’ll be exposed to more goodies (yay!) tomorrow, and some weekend adventures. And maybe a recipe or two. πŸ™‚

Ta ta for now!

(hmmm… that’s a lot of smilies for one post, huh?)

  1. When I procrastinate, I worry. I attempt to fix this by reading mindless thriller swinging by the pool and waterfall. Works nearly every time until i think again!

  2. If those lovely muffins are the result of procrastination, then it certainly isn’t a bad thing! I love the textural look of those. I saw the inside snaps on your guest post!

  4. Just goes to show you that wikipedia is a terribly unreliable source. Way to stick it to them, Lori!

I bake to procrastinate. Or go food shopping. Or read. Or do crosswords. Wow. I’m a dork.
