Pizza Stuffed Lori

Last night I helped make homemade pizza.

Last night I helped eat homemade pizza.

Last night I went to bed suffering with a belly full of (gluteny) homemade pizza.

But really, it was damn good.

The process of homemade pizza-making can be as simple or as hard as you make it, really. In the case of Lori, I go for simple. Simple means Trader Joe’s provides you with ready-made pizza dough.

This feast-of-pizzas was needing to feed 5 hungry people (boyfriend, Lori, Mama Samaan, Oma and Opa- boyfriend’s grandparents visiting from Germany), so I opted with two regular organic pizza doughs and one organic whole wheat.

The sauce was compliments of the Boyfriend.

The sauce was pretty much this recipe, and included the following:

  • 1 (4-ounce) can tomato paste + 2 oz extra if you have another can (6 oz total)
  • 1 1/2 cups water
  • 1/3 cup extra-virgin olive oil
  • 2 cloves garlic, minced
  • Salt and pepper
  • 1 tablespoon chopped fresh oregano leaves
  • 1 tablespoon chopped fresh basil leaves
  • 1 tablespoon chopped fresh rosemary leaves

Best. Sauce. Ever.

So, after preparing the sauce, gathering topping ingredients, and prepping the dough, we split the three doughs into two, totaling 6 pizzas. Enough math… let’s look at our creations…

PIZZA 1: Tomato sauce, mozzarella cheese, mushrooms, white onions, organic apple-smoked bacon, and freshly cracked black pepper.

PIZZA 2: Inspired by “The Best Thing I Ever Ate” on the Food Network, Yukon Gold Potato Pizza from Five Points restaurant. This pie included mozzarella cheese, THINLY sliced Yukon gold potatoes, white onions, and cracked black pepper.

————–

PIZZA 3: Whole wheat dough, tomato sauce, (previously) barbecued eggplant, white onions, and homemade dried tomatoes.

————–

PIZZA 4: Tomato saucemozzarella cheese, dried tomatoes, mushrooms, white onion, fresh jalapenos, and topped with fresh tomatoes.

————–

PIZZA 5: Whole wheat dough, tomato sauce, tiniest amount of mozzarella cheese, mushrooms, fresh tomatoes, roasted zucchini and yellow squash, and apple-smoked bacon.

————–

PIZZA 6: The Classic “Margherita”- Tomato sauce, mozzarella, fresh basil leaves, fresh tomatoes, black pepper, drizzle of extra virgin olive oil.

Boyfriend's hand drizzling olive oil

And then we ate… a LOT of pizza…

I’m telling you, these were literally the BEST pizzas I have ever had. Homemade is so much better tasting, cheaper, and more fun. It took about 2 hours to prepare and bake everything, though. And it was about 85 degrees outside, if not hotter. Imagine inside the house with the oven going and wine flowing…

  6. You know I rarely miss pizza, but these make me miss it….a lot. I want #5!!!

My favorite was always whatever has a ton of veggies on it. I love mushrooms, peppers, sauteed spinach, and some pineapple.

That TJs dough is fantastic too. I love it. I used to make it into breakfast pizza with eggs baked on top.

  7. I made pizza last night! I make a cheese one for the kids and the husband and I split our pizza down the middle. My side had olive oil/garlic topped with pine nuts, onions, red pepper and mozzarella and feta. His side had tomato sauce topped with red peppers, onions, chicken -apple sausage and a bit of cheese.

    Yum!

How was the potato pizza you made? Looks intriguing.

  8. Holy pizza!! Gosh I could eat pizza everyday, hot or cold. It is truly one of my favorite foods. I love it packed with a good sauce (yours looks fab!) and loaded with vegies. I love garlic, so some chunks of garlic are always on my pizza as well as spinach, bell peppers, olives, and sometimes I get crazy and load it up with brocolli and asparagus. There are no limits to pizza toppings!!

  9. Looks like beautiful pizza! Yes, homemade is always best.

I make pizza for my husband – since gluten and dairy are out for me, it doesn’t appeal much to me! He prefers pesto pizzas to tomato-ey ones.

I think the eggplant one of yours sounds especially good.
