Healthy Spiced Millet “Sugary” Cookies & Chocolate Chip & Mint Protein Cookies

You’ve heard this question a million and one times: If you were stranded on a deserted island, and could only have one meal to eat, what would it be?

You have probably answered this question at some point, too. And if you’re answer did not include kabocha or dessert, your answer was probably wrong. πŸ˜‰

Ok, so I’m totally kidding- your answer is your answer, but my answer would include the above items- and I’m talking meal here so we’re going to pretend that you get a meal (breakfast, lunch, or dinner) and a dessert… since this is my desserted island we’re stranded on, ok?

There is variety on my island, folks.

Spiced Millet “Sugary” Cookies a Lori-adapted recipe from Elana’s Pantry

Ingredients:

  • 1 1/2 cups millet flour
  • 1/4 tsp sea salt
  • 1/4 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/3 cup oil (I used olive oil since that’s what I had on hand)
  • 1/3 cup yacon syrup
  • 2 tbsp rolled oats
  • 2 heaping spoonfuls tahini
  • handful raisins
  • *2-3 tsp water, if batter is too thick

Combine dry ingredients in a large bowl. Combine wet ingredients in a separate bowl. Mix wet into dry and add raisins. Add water, one tsp at a time, if batter is dry.

Place “blobs” onto parchment covered baking sheet.

Pre-baked: Half with, half without raisins

Bake at 350Β° for 10 minutes, or until done to your texture liking (crunchy or soft and fluffy?).

The cookies came out tasting great, although they were a little dry and crumbly. Millet flour is light and gives the cookies an airy, fluffy texture, which I liked but also creates the crumble effect. A blend of millet flour with other flour types would work well. Overall, definitely a keeper of a recipe.

I know this is a deserted island and all but that doesn’t mean we only get one type of cookie…

Chocolate Chip & Mint Protein Cookies

Compliments of the never-ending Katie Library of Cookies; specifically this one.

Ingredients:

  • 1/2 cup GF flour
  • 1/2 cup chocolate protein powder (I used chocolate Vega)
  • 2 tbsp unsweetened cocoa powder
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup agave syrup
  • 10-15 drops Stevia (chocolate, vanilla, or unflavored)
  • 1/4 cup apple sauce
  • 1 tsp vanilla
  • 1/2 tsp mint extract
  • 1/4 cup chocolate chips

Combine flour, protein powder, cocoa, baking powder and soda, and salt. Stir together agave, Stevia, and applesauce in a large bowl. Add vanilla and mint. Gradually add flour mixture. Beat just until combined. Fold in chocolate chips.


Drop by tablespoonfuls 2 inches apart onto parchment covered baking sheetsy. Bake at 350Β° for 10-12 minutes. Remove from oven; cool on pan 5 minutes.

Can we tell which camera I used for which cookie photo session? Hmmm…

p.s. There was an oven on the island. Along with baking ingredients. I know they didn’t have that one Survivor.

  2. I’m not a dessert person, but I would totally take the kabocha. This is a toughie…but I would say either roasted cauliflower and broccoli, or pork & kabocha dumplings, or grilled cheese sandwiches. πŸ™‚

    So love the look of the first millet cookies (there aren’t many protein powders that taste okay here in Australia). I’ve only ever cooked with millet the grain, not millet the flour!

  8. If I were on a deserted island I would definitely need a variety of cookies. Hopefully that island would have unlimited coconut trees and I would need a mallet to crack them open..I think I could survive off cookies and coconuts πŸ˜‰

    I replied to your question on my blog about the picture layout, if you are still wondering. πŸ™‚
    I have some questions for you…why do you eat gluten-free? Do you feel better avoiding gluten and wheat even if you don’t have an allergy? Do you get sensitive to soy? I notice when I eat tofu, I get bad gas and bloating. Haha, it’s grosssss. But, I like the taste of tofu. πŸ™
    And, I’ve been trying to clean my diet of sugars. Well, I will still eat fruit and other natural sugars found in veggies, grains, etc, but I am not sure which sugars I should keep. I want to start feeling the best I can be without the sugary stuff (like cereals, granola, yogurts, etc). That’s another thing…yogurt! I love Greek yogurt, but my palate needs to get used to the plain flavor. I HATE consuming so much sugar in the sweetened varieties. Do you eat yogurt? If so, what kind and what do you do to make the plain taste better without so much added sugar?

  11. Damn, I wish I’d read this before putting the mint chocolate chip cookies in the oven! I have some hemp protein powder and I can’t handle it in smoothies, but I didn’t think to try it in cookies. Guess I have to make some more…. πŸ˜‰

    Those millet cookies look….a little too healthy for me. If I made them, I’d have to call them granola bars or something.

  12. Love the ‘desserted island!’ Pedant editor that I am, when I saw the title I thought ‘oh no,’ but then I realized that you were doing the fun pun thing.

    Those cookies recipes both sound great. Even with my ND-imposed ‘eat some things you think you shouldn’t,’ I still don’t think I can eat cookies, but Phil’s daughter, who has to avoid gluten, will love these.

    For me on a dessert island – all things coconut! Bring a wheatgrass juicer and you can make coconut cream, and make pie crusts with the pulp, sweeten with the young coco…

  13. i am so gonna make those protein cookies! i’ll probably try the millet cookies, too. i always wanted to try millet, but didn’t know what the texture was like-i guess i assumed it was dense. i guess i was wrong! πŸ˜€
