Vegan Chocolate Chip Thank You Cookies

Vegan.

Gluten-free.

Cookie.

Dough.

Baked.

And so addictive, you’ll think they’re made with crack. But crack probably isn’t vegan (or gluten-free, or even something you’d want to consume if you’re reading my blog since you’re obviously interested in healthy things…) so you’re safe.

A long time ago, in a far away galaxy, as Katie would say, a fun and amazing yogi, personal trainer, and best friend named Anne, had a Superbowl party (I told you it was a long time ago). During this Superbowl party Anne made vegan brownies and cookies. Lori, from What Runs Lori and eater of said brownies and cookies, loved the cookies so much that she decided to nag Anne until she gave up her secret… and that’s where it all began…

Or that’s where the recipe came from. I just made them gluten free. But damn, they’re good. Make these for someone you need to thank… and trust me, thank them you will.

Chocolate Chip Thank You Cookies

[vegan and gluten-free, and made with appreciation]

adapted to be gluten-free from Anne’s recipe

  • 2 1/4 cups gluten-free flour mix
  • 1 tsp baking soda
  • 1/4 tsp sea salt
  • 1/4 tsp Xanthan Gum
  • 1/2 cup organic turbinado gugar (Sugar in the Raw) <–key to a wonderful crunch!
  • 1/2 cup brown sugar (or NuNatural’s Baking Blend)
  • 1/2 cup butter, softened
  • 1 tsp vanilla extact
  • 2 flax eggs (2 tbsp ground flax, soaked in 6 tbsp warm water for 5 min)
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup walnuts (optional, obviously)

Preheat oven to 350 degrees.

Combine flour, baking soda, and salt together in a medium bowl.

Beat sugars and butter on medium speed until light and fluffy.  Add vanilla and flax eggs and beat until combined.

Slowly add flour mixture and mix until combined.  Stir in chocolate chips.

Drop by rounded tablespoons, 3 inches apart on a baking sheet lined with parchment paper.  Bake 10 min or until lightly browned and cool on baking sheet for 2 min.  Cool completely on wire racks.

    I think I prefer cooking, but I do quite a lot of baking also, I just don’t eat any of it at this point! Even my gf peeps love their butter and sugar, and I have more flair for raw desserts… Our teeny tiny toaster oven is kinda hard to make cookies in too.

    I think you’d laugh at my latest recipe disaster…
    Oh, and I haven’t played much with Nunaturals baking mix: does it work well for you? Do you sub out some flour and some sugar, or just sugar, when you use it?

  4. I prefer cooking over baking, just because I love trying new recipes anddd I love dinner foods more than desserts (I’m weird, I know 😉 )

  6. Okay I use to make these cookies called tiger cookies ..they remind me of the monster cookie you gave to the birthday boy:) Ps Happy Birthday Sascha!!
    I haven’t had cookies in so long..perfect timing:)

    Favorite thing to bake…hmm that’s a hard one. I love banana bread as it makes the house smell amazing but I would say any kind of cookie (that contains chocolate in some form) is my favorite thing to bake…and eat:)

    I’m way better at baking but I really want to get better at cooking (spice combining especially) and not have to resort to using a recipe all the time.

  11. I….am now not even going to bother posting my vegan whole grain chocolate chip cookie recipe. LOL it is identical except I used whole grain pastry flour and a chia egg instead of flax. Hahaha. Same wavelength?

  13. Hol moly that is some cookie! I love the big hunks of chocolate you used! I am always on the lookout for a healthier chocolate chip cookies since they are my hubbys fav!
