Amazing Chocolate Truffle Vanilla Vodka Bites

This title just makes me smile… And giggle just a bit.

It’s now Tuesday but I’m still relishing in my wonderful weekend, now past. I taught a boot camp class, came up with a few workouts for my wonderful readers, got my garden planted, and did a little birthday celebrating on Saturday.

Before we get to all the food and celebrating, I’ve got a killer workout to share. It’s short(ish) and requires nothing more than your body. By request, no gym or extra equipment needed.

 

The Dirty 30

  • 30 mountain climbers
  • 30 burpees
  • 30 weighted sit ups (holding a 25# plate or anything heavy- challenge yourself!)
  • 30 body weight squats (focus on keeping weight in the heels and going low)
  • 30 side planks (each side)

If you’re feelin’ adventurous, repeat this 3 times. Wonderful. 🙂 And let me know what you think of the workout! Trust me, if it’s burning, you’re doing it right.

Anne‘s husband, Brian, was the weekend birthday boy. It was our job to make sure he was well fed and having a great time.

Anne supplied the crazy-delicious whiskey lemonade mixture and skewered and barbequed meats (even though she’s a vegetarian- what a nice host she is). The rest of the party attendees brought garlic hummus (ooooh so yum), dips, chips, fruit, German potato salad (which my boyfriend made, and I forgot to take a picture of but so good),  and my celebration balls. 😉

Anne also, being the amazing cook/baker she is, made homemade pound cake with orange marmalade glaze. Omg it was amazing. Loaded with sugar, but still amazing.

And the Celebration Balls I brought were a hit! These moist little cookie balls were super fudgy, slightly sweet, and spiked with vodka. Now tell me you wouldn’t celebrate with these balls (hehe).

 

Amazing Chocolate Truffle Vanilla Vodka Bites

[fudgy and alcohol spiked. gluten and dairy free. vegan and damn good.]

Recipe inspired and heavily adapted by Healthful Pursuit’s Irresistible Chocolate Truffle Cookies

  • 1/4 cup extra virgin, non refined coconut oil
  • 1 1/2 cups semisweet chocolate chips (I used Enjoy Life chocolate chips)
  • 2 flax eggs (2 tbsp ground flax seed + 5 tbsp water)
  • 8 medjool dates
  • 2 tbsp vanilla vodka (or other alcohol of choice- rum would be good)
  • 1 cup almond flour
  • 1 cup coconut flour (or finely ground unsweetened coconut flakes)
  • 1/4 cup Bob’s Red Mill GF Brownie Mix
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Directions:

  1. In a double boiler, melt the chocolate and the coconut oil, stirring the entire time it’s heating. When melted, remove from the heated water and set aside.
  2. Combine flax eggs, dates, and vodka in a blender and blend until smooth.
  3. In a large bowl, combine almond and coconut flours, brownie mix, baking soda, salt, and melted chocolate. Stir until thoroughly combined. Batter will probably be thick.
  4. Cover and place dough in the fridge for 1 hour.
  5. Preheat oven to 350F
  6. Roll chilled dough into 1 inch balls. Place on a parchment paper lined cookie sheet, keeping 1/2 inch between each cookie.
  7. Bake for 10 minutes.
  8. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely Eat when you’re ready and the cookie balls are cooked. The batter is delicious too!

Makes 40+ Celebration Ball.

One word of caution: These are DELICIOUS.

These babies got raved reviews at the party, so make them. You’ll thank me.

And then you’ll get your exercise on… right?

    I’m trying this workout…hold me to it…though I’ll probably be cursing your name after all those burpees! Hate burpees! I’ve never taken a boot camp class before, but when I used to do crossfit, I would swear my booty was handed to me on a somewhat daily basis!

  9. Love the dirty 30 workout…hate burpees lol! I’m learning to land softer on the kick back which is making them more enjoable but I’m in shock everytime how they make me so incredible breathless!

    Your birthday celebration feast looks amazing..love get-togethers with amazing, healthy food!

    As for the celebration balls…heck yes!! vodka spiked? how cool is that!

    We celebrated some good friend’s of ours litte guy’s first birthday. AKA adult get together and let the kids play and burn off their energy time!

    I took bootcamp one summer and loved it! It was outside, on the beach, and sometimes I was the only one (very new in my town at the time). I like doing bootcamp style workouts at home sometimes- jump rope and lots of bodyweight fun! I’m now riding my bike to work everyday (30km total) so my legs are going to be dead for the first few weeks so I’m planning on minimizing legs and focusing on abs and upper body. By August I want to see my abs so I better get moving!

  10. I LOVE bootcamp style workouts! I just started at a new gym a couple months ago, but I want to do a bootcamp again soon, when the weather warms up (I like outdoor bootcamps!). the last one I did, a couple years ago, was AWESOME. right after I signed up for my second “round” my appendix BURST in two… so I had to cancel and I never went back after I was healed. I will this summer! 😀

    no actual celebration right now – we have a few weddings coming up, so those will be fun 🙂 we started planning a little road trip / getaway for next month (wee!) and I’m definitely excited about that!

  11. Vanilla vodka… yaaaa now we’re talking! I love what you did to my cookies. Balls are better, and yes, I giggled over the title too.
    Question about the 30s: 30 side planks – is that holding it for 30 seconds? Or 30 in a row both sides? I’m assuming that the others are count.
    I’m TOTALLY doing this tomorrow and letting you know.

  12. oooooo! Balls look amazing! I think a little cherry vodka might be good too! A little fruity kick? I dunno…oh and never sick of dessert recipes. Please! Always makes my day to see something yummy. I haven’t tried a bootcamp like workout…I ssso want to but I could never work it out hours wise..I might just take the dirty 30 and do it on my own in the mornings. What a great ass kickin workout!

    I actually hate the taste of alcohol, so Im not sure how I feel about your balls (hehe) but I do love chocolate, so I am sure I could manage to down a few!!

    1. Don’t like alcohol- just sub in 1 tsp or so of vanilla extract and you’re golden. 😉
      Although they don’t really taste like vodka at all.
