Bacon Enhanced Guacamole + Socca = Bac’amole Enchilada Pizza

Why, it’s Bacamole Enchilada Pizzas!

You know when you get a craving for something, it just keeps nagging and calling out to you? Days pass, then again that same craving comes back. And all you want is to give in to the craving that keeps creeping it’s way into your thoughts.

I do know what that’s like. And I did give in. Oh yes, I gave in…

Bacon and avocados.

I’ve been craving bacon like crazy lately. For the record, I don’t eat bacon. Nor do I really care for it much. But for some reason I’ve been wanting it, needing it. What Lori wants, Lori gets. In this case, you get it too. πŸ˜‰

So, I wanted bacon and guacamole and pizza. Especially after seeing Dorry and Billy’s pizza night… swoon.

This was the closest thing to all of those cravings.

Bac’amole Enchilada Pizza

[just do it]

  • Socca crust
  • Bacon Enhanced Guacamole
  • Enchilada sauce

Cumin Socca Crust

  • 1 cup chickpea flour
  • 1 cup water
  • 2 tbsp coconut oil (um… I may have splashed some bacon grease in there… don’t judge!)
  • 1 tbsp cumin powder
  • dash of salt

Preheat oven to 450 degrees. When oven is ready, place coconut (ahem, bacon) oil in a pan and stick in the oven for 5 minutes. Meanwhile, whisk all ingredients together in a bowl.

Carefully remove HOT pan with oil from oven and pour the socca batter into the pan, tipping the pan to spread the batter evenly. Place back into the oven and bake for 30-45 minutes, or until socca crust has browned on the edges and is cooked in the middle.

While the socca is baking, cook your bacon and begin your guacamole journey…

Bacon Enhanced Guacamole

[specific amounts are completely up to you- it’s your guac!]

  • 4 slices of organic smoked applewood bacon (or just bacon…), cooked and crumbled into small pieces
  • 2 ripe medium-sized avocados
  • 1/4 white or red onion, diced
  • 1 bunch cilantro, roughly chopped
  • 1 can green chili peppers, mild, medium, or HOT!
  • juice of 1 lime (3 tbsp?)
  • 1 clove garlic, crushed
  • cumin, cayenne pepper, salt, pepper, to taste

Combine all ingredients in a bowl and try not to devour before you assemble the pizzas.

Enchilada Sauce

  • 1 jar. Use as desired.

When socca’s done, cut into desired pieces, top with bac’amole and drizzle enchilada sauce. DEVOUR.

And thank me when you’ve eaten a ton of it.

 

As delicious as this meal was, I don’t think I’ll be turning this route in the future…

However, I WILL be making this soon…

  9. Bacon cravings are no joke, man. When I was a vegetarian, that was literally the only meat product that I had a really hard time not eating. This looks so good!

  20. I get cravings for bacon from time to time. I had them a lot when I was vegan… hence why I’m not vegan anymore!!
    A couple of weeks ago I went through 2 packs of bacon in a week. We go to an organic butcher, and it was beef bacon… so I wasn’t to “worried”. This dinner looks absolutely fantastic!
