When All You Need is a Cookie, Cookie

Have you ever had one of those days weeks when the only word that describes your mood is Poo? Well, I am in that sort of a funk right now. I’m tired, worn out, feeling displaced (whatever that means), and just reaaaaaaaaaaaaaaaaally needing a cookie.

When in need of a cookie, as such this funk would requires, I have to bake them. No store bought items of warm, gooey comfort here. Cookies require home-baked love. And reduced sugar… since sugar might actually make the Poo feeling worse.

After looking up a few different cookie recipes I finally came to the conclusion I needed sweet and savory… and to make Angela‘s Salt-Kissed Peanut Butter Chocolate Chip Cookies… only my altered version

aka: Creamy Chocolate Chip Cookie Bar

[packed with protein, gluten-free, and guaranteed to improve your mood]

  • 1  1/4 cup coconut flour
  • 1/4 cup NuNaturals Baking Blend
  • 2 tbsp protein powder, or other flour (I used Life’s Basics Vanilla plant protein)
  • 1/2 tsp fleur de sel (or reg. salt)
  • 1 tsp baking powder
  • 3-4 tsp non-dairy dark chocolate chips
  • 3 tbsp chunky almond butter or peanut butter
  • 1 egg
  • 2 tsp pure vanilla extract
  • 1/4 cup pure maple syrup
  • 3 tbsp coconut oil
  • 1 cup Greek yogurt (I used 2% Fage) (may sub coconut yogurt or 1 ripe banana)
  • 1/2 cup almond milk
  • Fleur de sel, for garnish

Preheat oven to 350 degrees. Grease an 8×10 baking pan and set aside.

Mix all dry ingredients together: coconut flour, NuNaturals Baking Blend, protein powder (if using), salt and baking powder. Add in all the rest of the ingredient, mix thoroughly. The dough may be on the dryer side, due to the coconut flour, so feel free to add more almond milk, as needed.

Pour (or plop, depending on the consistency- mine was slightly dry) your batter into the greased baking pan, packing dough down evenly. Sprinkle with more Fleur de sel. Bake for 30 minutes, or until the sides of cookie bar bakes away from the sides.

Remove from oven and let cool, if you can, I couldn’t, for 20 minutes. Again, I did not wait for them to cool, and they were delicious warm and gooey.

After “sampling” two large squares of cookie goodness I realized a better description of my feelings might be Mmmmmmmmmmm, not poo. I felt much better after these. Not to mention, the addition of the large salt crystals, oh my, were outstanding. Talk about bursting with flavor.

There you have it, Creamy Chocolate Chip Cookie Bars. They’re addictive and healthy and wonderful in every gluten-free way. 🙂 Oh, and they’re pretty much Paleo-approved, too.

And I’ll have to mention my new recipe goals for the next few weeks… to make everything, EVERYTHING Amber posted about. Go look at the food she’s eating… I’m drooling just thinking about the Curry Wraps and Dream Bars… oh my.

  1. just found your blog and love it! i cant wait to make these bars, they look delicious! i was just wondering if you think i could sub nunaturals stevia drops for the baking blend, and about how much. ive never used the baking blend and i dont want to wait so long to order it and recieve it in the mail. me want cookies now!!! yummm. 🙂

  2. Yum–I might have to make this tonight for my husband and his daughter. I don’t get cookies. But my carrot bars are filling the gap at the moment. Honestly, when I’m done with this yeast cleanse (3 more weeks yay), I’m most looking forward to some durian, and maybe some banana ice cream, which I literally haven’t had for years.
    Thank god I’m home now and blogger is back up!

  4. That recipe looks awesome- which flavor comes through the strongest? Peanut butter or coconut or other? And amazing call on Crunchy nut butter… its the only way to live.
