Easiest Chocolate Health Bites

June 11, 2011

Thank you again everyone for the amazing words and happy thoughts for my dad and family. I wish all of your families total health, too. I know some of you have had to deal with the health of loved ones.

I know I live my life the healthiest I can, while still enjoying it. And these little chocolate health bites are no exception. Health plus taste. Plus, it’s gluten free, dairy free, refined sugar free, and Paleo Diet approved.

Meet the makers.

Almond Butter.

Avocado Honey.

A dash of this. A dash of that.

Raw chocolate wonderful.

Drizzled with care.

Combined to perfection.

And then stuffed into a date.

Easiest Chocolate Health Bites

[for stuffing, rolling, and eating with a spoon]

  • 3 tbsp almond butter (I used raw, unsalted)
  • 2 tbsp raw cacao or unsweetened cocoa powder
  • 1 tbsp honey
  • 1 tsp instant coffee granules, optional (I use decaf 😉 )
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Simply mix all ingredients into a bowl. Eat, stuff, roll into balls, whatever you’d like. Deliciousness never did taste so wonderful.

I made these for Keith yesterday and the entire batch is gone! He loved it! He just ate it straight with a spoon and he kept going back all day and getting a taste her and a taste there.

Oh my gosh, you read my mind! Except that you thought of it first 🙂 I was just thinking of a similar filling to stuff a date instead of nuts!

Ummm YES! I usually stuff dates with almonds and bring them along with me for my races, but this is WAY cooler.

Oh goodness I am always stuffing dates with something lol A container now lasts me maybe a week. I think I have at least 5 everytime I snack, and I usually snack twice on them. Date overload?

oh man, that spread on toast would be amazing! i’ll leave the dates for you (can’t stand ’em after growing up in the ‘date capital of the us’!) but definitely take the spread!
