Lunch for the Busy: Romaine Tuna Boats

I’m busy, you’re busy, we’re all busy. But I know you’re not too busy for lunch. Never!

You know skipping meals can slow your metabolism, elevate fasting glucose levels and delay insulin response (can we say soon-to-be diabetes), and cause you to overeat later on. Not so productive for trying to lose weight, if that’s your end goal. Repetitively skipping meals is definitely not so great for overall health. Busyness can no longer be an excuse.

You probably have most, hopefully all, of these ingredients in your fridge and pantry at this very moment. But if you don’t, run out and grab them, keep them on hand, and make this dish over and over as needed for busy days.

Romaine Tuna Boats

  • 1 can tuna, unsalted
  • 1 tbsp plain Greek yogurt, mayo, or vegan alternative
  • 1 tbsp tahini (or almond butter if tahini is not available)
  • 1 tbsp lemon juice
  • handful of raisins
  • salt, pepper, paprika, to taste
  • 4 large romaine leaves
  • cherry tomatoes

Drain, rinse, and drain the can of tuna. Place all ingredients into a bowl, stir, and spoon onto cleaned romaine leaves. Top with halved cherry tomatoes and serve.

Such an easy dish, it’s a shame to eat it alone. Share this with a friend, family member, or you and your tummy. Eat for breakfast, lunch, dinner, or even a snack. Loaded with super lean protein, lots of flavor, and even veggies, this is one unskipped meal you’ll love.

You’re never too busy for lunch, right?

  1. you’re right, I’m never too busy for lunch. Once I delayed my lunch by 1pm because I was in meetings ALL day, and I was such a grumpy mess. Never again.
    I had this SAME meal for dinner last night. I love the idea of using greek yogurt where most people would use mayo!

  2. Ack! On my days off I seem to brunching it and then eating a big snack mid afternoon. That’s like lunch right?
    I aaalways forget about boats. And raisins and tahini in tuna salad? GENIUSSS!!

  4. This recipe, again, was made for me. I have been loving on tuna salad these last couple weeks (now that its getting HOT)! But… I never thought to include TAHINI! You know that tahini courses through my veins.. not blood.

  5. I agree! Always time for lunch and these yummy tuna boats! I was atually thinking of making something similar today! (Great minds think alike) I dont have lettuce at the moment so I was gonna do tuna salad with zucchini noodles…I went crazy with my spiralizer yesterday.

  9. never too busy for lunch! though we do struggle from time to time keeping meals prepped and ready to go for us to enjoy, we usually are just throwing whatever we have on had together.
