Raw Maple Walnut Creme filled Chocolate Chip Cookies

You know the saying, “Live life to the fullest”?

Sure you do. People tell you that for encouragement, to clarify others being a go-getter, and to just sound more wise(r than they are).

Personally, I love the quote, although I think it’s a bit too impersonal. Live life to the fullest of what? Full of work? Full of exercise? How about full tummies?

How about living life to the fullest cookies?

Chocolate chip cookies? Stuffed cookies? Cookie sandwich?

You see I have a hard time with things that require any amount of attention. Like watching movies. I have about a half hour window for the movie. If it’s good, I’m pretty much home free to make it to the end. Most of the time I’m blogging, emailing, texting, reading, or doing bicep curls while watching the movie, only to abandon it 30 minutes before the ending.

Back to the fullest cookie.

Taken and adapted from a great idea by the Pure2Raw twins, this cookie sandwich boasts tons of flavor, gluten free goodness, raw and vegan adventures, and just plain fun packed in a few bites. Not only is it healthier than any alternative, it’s delicious.

COOKIE:

  • 1/2 cup coconut flakes
  • 1/4 cup pumpkin seeds (or any nut of choice)
  • 1/4 cup lucuma (or more coconut or nut/seeds)
  • 1/4 tsp sea salt
  • 1 tbsp vanilla
  • 3 tbsp maple syrup
  • 3 dates (or more 2 tbsp more maple syrup)
  • 1 tbsp water
  • 2 tbsp chocolate chips, or cacao nibs for truly raw and paleo

Place coconut, seeds, lucuma, and salt into a food processor and grind into flour. Add the remaining ingredients, processing until completely blended. Adjust the sweetness/salt as needed to your taste.

Placing the dough in between two pieces of parchment paper, roll out cookie dough. Use a cookie cutter to cut into circles and place in the freezer to harden.

MAPLE WALNUT CREME:

  • 1 1/2 cups walnuts
  • 1/2 cup water, divided
  • 1/4 cup dried banana chips (or any dried fruit of choice)
  • 4 tbsp maple syrup
  • 2 tbsp (decaf) coffee granules (or espresso granules) (completely optional but SO good included!)
  • 1 tbsp vanilla extract

Place ingredients into food processor or blender. This will get thick, stop and scrape sides as needed to completely blend all. Feel free to add in more of any ingredient (sweet, savory, bitter, etc- maple syrup, salt).

COOKIE SANDWICH:

Once cookies are set in the freezer, scoop a spoonful of walnut creme onto a cookie round. Top with another cookie. May set in the freezer longer, or eat as is.

Any extra dough you no longer have attention for may be rolled into balls, as I did. Because we both know I only have so much attention before I get bored. 😉

Makes about raw cookies made about 10 small circles, depending on your cookie cutter.

  1. I am actually in the process of making these right now. The dough part however is not coming out like I thought it would. Seems like such a small amount and more wet….maybe I messed a step up. It does taste amazing though and I’m going to try freezing anyways and more on to filling 🙂
