Today is one that I’ve been procrastinating on for some time now. Not with writing the review but with making the actual recipe! Why I waited so long, I’ll never know…
Way back when, err, in May, Christin of Purple Bird Blog wrote a wonderful guest post for my blog. She included an awesome photo of her and her cute little dogs and a fun and easy scone-like recipe.
Silly me for waiting this long to try out her recipe. Now that I have I’m in love, love, love!
It’s an easy recipe, requires only a few ingredients, and can totally be made into a Paleo-friendly recipe (which this one pretty much is). It’s gluten free, dairy free, and makes one round glass pie pan full of cake-like scones, which will disappear without a trace.
Low-Sugar Chocolate Chip Cake-Like Scones
- 1/2 cup coconut flour
- 1/2 cup Raw Power protein powder (or protein powder of choice OR brown rice flour)
- 1/2 cup NuNaturals Stevia Baking Blend
- 1/2 tsp sea salt
- 3 eggs
- 1 tsp almond extract
- 1/2 tsp chocolate extract (optional, may sub vanilla extract)
- 1/2 cup + 1 handful (technical term) dairy free chocolate chips (Enjoy Life Brand is excellent)
- 1 large banana
- 2 tbsp coconut oil, melted
Bake at 350 degrees for 30-35 minutes.
Mmmmmm… it’s so good. Moist and hardy. Gooey and delicious. Warm, only slightly cooled from the oven was great but hours later it was even better.
These are definitely going to become a repeat offender in my house because they were so dang great! They disappeared quickly and were incredibly addictive. I think it was the addition of almond extract. That stuff is delicious in baked goods.

These look soooo good! This may be a silly question but does coconut flour taste coconut-y? I’d like to try it, but I don’t like the taste of coconut (I know, it’s terrible!). I’m sure I could sub in another flour though.
