Paleo Apple Cinnamon Protein Pancakes
Makes 6 slightly crumbly*, protein-packed, gluten free, dairy free, Paleo-Cakes
- 1/2 cup almond meal
- 1/2 cup protein powder (or additional almond meal)
- 1/2 cup green apple, grated
- 1/2 cup Lana’s Egg Whites
- 1/4 cup NuNaturals (replaces sugar and adds fiber)
- 1/4 cup almond milk (or water, only if batter is slightly dry)
- 1 tbsp lemon juice
- 1/2 tsp baking soda
- 1/4 tsp cinnamon
- 1/4 tsp sea salt
Combine all ingredients together in a large bowl. Set aside to heat your skillet.
In a large, heated skillet, spray with cooking spray or coconut oil to coat the pan. Spoon 1/4 cup pancake batter into pan and heat on medium-high for 4-5 minutes each side, flipping once.
Plate and devour!
*Note: These paleo pancakes may be slightly crumbly… they’re still great tasting though!
These Paleo Cakes turned out incredibly delicious. A perfect balance of sweet and salty along with warm, festive flavors of apple cinnamon.
I’m telling you, these are g o o d. Be warned though, these are crumbly and fall-aparty. I’ll work on perfecting these but in the meantime, the taste is still To-Be-Tried!
