There’s only one way to legitimately have champagne at lunch…
And that’s whisked around in a tangy, flavorful, slightly bubbly, vinaigrette.
…Whisked, fizzing, and melding with sweet white balsamic, bright and sour fresh lemon juice, and herbaceous cilantro and green onions.
Yep, it’s certainly a decadent, plate friendly, way to enjoy the celebration drink- healthily, I might add. Along with a Paleo-flare.
Wrap everything nice and tight (or just plopped on top, like I so lazily did), in a gluten-and-grain-free spinach wrap and call it a day… errr… lunch?
Top it with green? Leave it naked. No one will judge.
Thoughts of changing the name of this dish to Legit Paleo Chicken Salad did crossed my mind. It’s delicious!
Of course, there are other permissible ways to enjoy some bubbly before, during, and/or after lunch, but I’ll let YOU be creative with the rest of the bottle…..
Mediterranean Paleo Chicken Salad & Champagne Vinaigrette
Serves 4. Gluten and grain free. Paleo diet friendly.
Champagne Vinaigrette
- 3 tbsp champagne
- 3-4 tbsp white balsamic vinegar (could use white vinegar, balsamic, or other vinegar)
- splash of high quality olive oil
- juice from 1/2 lemon
- optional, 1 drop of Stevia
Directions:
Combine all ingredients in a large bowl. Taste and adjust the vinegar, champagne, or lemon to your liking.
Add to chicken salad (below) or any greens you’d like.
Add salt and pepper, to taste.

Mediterranean Paleo Chicken Salad with Champagne Vinaigrette
- 1 chicken breast, shredded, diced, or use canned
- 1/2 cup broccoli slaw (bagged from Trader Joe’s)
- 1/2 cup cilantro, roughly chopped
- 1/2 cup cherry tomatoes, sliced in half
- 2 green onions, thinly sliced
- 10 kalamata or Manzanilla green olives, roughly chopped
- handful of crumbled goat cheese
- handful pomegranate seeds
- salt and pepper, to taste
- lettuce greens
- Champagne Vinaigrette (above)
Directions:
In a medium bowl, combine all ingredients, mixing well.
Taste and adjust the amount of salt and pepper, to your liking.
Top with Champagne Vinaigrette. May use all or a portion of the recipe- depending on how tangy you’d like your chicken salad.
Eat alone, atop a gluten-free spinach wrap/tortilla, on a bed of greens, or with a glass-o-champagne.
