Raw Chocolate Frosted Brownies

I’m all about dessert.

I love the sweet satisfaction of finishing a meal and following up with dessert. Rich, delicious dessert.

BUT…. I’d rather not throw white sugar, white flour, butter, etc. into my body if I don’t need to.

And guess what? I don’t need to!

I can have my desserts and health too.

Raw desserts are my go-to source for nutrients and sweets (because we all gotta live and enjoy life, right?!).

“Raw” desserts usually contain dates for the sugar or sweetness, nuts for the rich, flavorful fats, and other fun but equally nourishing ingredients. I favor raw cacao- unadulterated chocolate powder. Mmmmmmm!

Make this recipe when you’re feelin’ desserty, when you’re craving sweets, when you’re still needing to fit into your skinny-minny bikini, and when you’re wanting to impress.

Raw Chocolate Frosted Brownies

Recipe adapted from Dreena’s Frosted B-raw-nies

Gluten free, dairy free,

Brownie:

  • 1 cup raw almonds
  • 1 cup raw cashews, walnuts or more almonds
  • 1 1/2 – 2 cups (packed) pitted medjool dates
  • 1/3 cup raw cacao powder (or unsweetened cocoa powder)
  • 2 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1/2 tsp almond extract (optional)

Frosting:

  • 1/3 cup coconut oil
  • 1/4 cup raw almond butter
  • 2 tbsp raw cocoa powder (or unsweetened cocoa powder)
  • 5 drops liquid Stevia, or 3 tbsp honey
  • pinch sea salt

Brownie Directions:

In a food processor, first add almonds and cashews and process until very fine (the almonds are the hardest, and need to be worked until crumbly). Let them process for a minute or two until fine. Add dates, cacao powder, vanilla, salt, and almond extract, and pulse through.

The mixture should be sticky and hold together when pressed with fingers. If it’s too dry/crumbly, add a few drops of water or vanilla extract. If too wet, add in more nuts or cacao powder.

When the mixture is sticky and will hold together, remove it from the processor and press into a brownie pan (8” x 8”) lined with parchment paper or plastic wrap. Press mixture firmly and evenly and place into the freezer or refrigerator.

Frosting Directions:

For the frosting, first combine coconut oil and almond butter until smooth, or as close to possible. Add remaining ingredients and pulse to mix, making sure not to over-process. Alternately, you can stir all ingredients in a bowl. πŸ™‚

Smooth frosting over base, and refrigerate for an hour or more until set. Cut into squares and serve. You can also freeze the squares after cutting, and enjoy them out of the freezer.

I brought these cute little bit-sized brownies into work. I must say, they were a hit! All of my coworkers and managers were going crazy for the “interesting health food” that I brought. I had a few coworkers even request the recipe!
