V8 V-Fusion Sparkling Winner & Paleo (Green) Sweet Potato Hummus
This is a short and sweet, quick post with the V8 V-Fusion Sparkling Pack winner announced and a delicious, Paleo, scrumptiously healthy snack recipe.
How’s your Thursday going? My whole week has been NUTS. And I’m not talkin’ almonds.
So, for the V8 V-Fusion Sparkle pack, I asked you (via Facebook) what made you sparkle. And the answers I got in return were awesome.

And now, a hummus recipe…
Paleo (Green) Sweet Potato Hummus
- 1 medium steamed/baked sweet potato, cooled
- 2 medium zucchini, cut into pieces
- 1/4 cup lemon juice (+ or – depending on your sour/thickness preference)
- 3 tbsp tahini
- 1 tbsp olive oil
- 1-2 tsp cumin
- 1/2 tsp paprika
- 1 tsp sea salt
- 1/4 tsp pepper
Directions:
Blend all ingredients together in a blender or food processor until smooth. Add in a touch more lemon juice to thin, to your liking.

I have never made sweet potato pie, but have always wanted to try it. I have been told that you make it in the same way that you make pumpkin pie, only substitute sweet potato mash for the pumpkin mash.
I just love potatoes so much and I guess this is one of the best recipes I can make as of now.. Thank you for the information provided here for us..
