(Avocado Coconut) Cowboy Cookies

I know what you’re thinking… Avocado? Cowboy? What on Earth?

You know what I’m thinking… Ah, the weirder the better. :)

And I can assure you and me both that these cookies rock. They’re light, fluffy, gluten-free, dairy-free, grain-free, lowish carb, and yummy. They are cookies, of course they are yummy. I wouldn’t make a cookie that wasn’t… or at least I wouldn’t post it, as sometimes even Lori’s produce sub-par baked goods.

But not these! These are good. And I have been enjoying them as a mid-morning snack just about every day. Guilt-free, mind you. Yup, they have chocolate chips in them, but that just adds to the complexity of my snacking. ;)

Don’t you just love how I make up random babble??

Why I used these ingredients:

Avocado: Avocado was used in replace of added oils or fat. The natural, healthy fat in the avocados acts to moisten the cookie and give it a buttery texture and taste.

Banana: Bananas act as a binder, helping the batter stick together. They keep the cookie nice and moist, and give them a slightly sweeter taste without adding tons of sugar.

Coconut: Healthy fats, again! And a bit of a crunch factor. If coconut doesn’t float your boat, feel free to leave these out, if you wish.

Sea salt: Delish! Don’t forget to add salt to your baked goods. Salt, sea salt in particular, adds minerals and enhances the flavor of foods. Salt and make or break a recipe or dish. Don’t be afraid to use salt- if you’re not eating processed foods, you’re not going to consume too much sodium.

Apple cider vinegar: This helps the cookies become fluffy when baking gluten-free baked goods. Don’t ask me why…

Honey: Because it’s yummy, adds complexity, and isn’t process, white sugar. You may sub with any sweetener you’d like.

Cowboy: Because I created these cookies based off of a recipe for Cowboy Cookies from Gluten Free By Nature. She has some crazy-great recipes.

But really, we HAVE to meet up this time. And I think there should be alcohol involved. Maybe cookies too.

Wow these sound great! With only 1/4 avocado, can you really taste it though? I’m thinking about adding coconut flour and avocado to a meatloaf tomorrow in place of oatmeal or breadcrumbs

With a whole avocado you wouldn’t be able to taste it. Avocado doesn’t really have a taste in baked goods, just gives it a creamier, richer texture.

The weirder the better, and yes, I do adore how you spin a random babble ;)

That said, I’m kinda leery of the idea of cooking avocado–it just makes me think brown oxidized not appealing… But looking at the recipe, I could imagine subbing applesauce or pumpkin or yam puree for the avo and it would be grand like that too!

WOW! We just made these, and they are fantastic! I’m always on the search for yummy paleo baked goods, but these are extra-special because my daughter can bring them to her nut-free school for snack!
I may have been a bit more liberal with the liquids, because ours weren’t as “ball-like”, but they are great! Thanks!

Hey Lori I found your blog on the healthful pursuit blog and I’m so happy to have found it! I just made this recipe using flax instead of eggs as a substitute….it came out awesome. I love the combo and texture. I have been searching endlessly for recipes that utilize coconut flour in a unique way. Thanks for the great recipe!

OMGOODNESS! I just made these for my friend that’s visiting…. and I squeezed a little in my little hole- totally amazing awesomeness! Banana bread-esque. Loved it, can’t wait to chow down when I’m cut free :D

Put a tbsp of vinegar in a cup, add a pinch of baking powder and watch what happens – that’s why the vinegar makes the batter “rise”.

this pictures of your cookies look amazing and I love the ingredients! But for some reason my batter came out to more of a cake/bread batter consistency, so I put it in muffin tins and hoped for the best. The muffins came out yummy, but the bottoms were wet and mushy….maybe it was because I used frozen bananas, and used a blender to mix them with the Avo and milk. Or maybe because I used spelt flour. Who knows? When I tried adding extra flour to the leftover batter, the muffins came out with a better, firmer form

I used almond flour, and had to add more than 2 cups to get them anywhere close to a cookie dough consistency! As a fairly seasoned baker, the proportions just don’t look right in the original recipe. Anyhoo, they’re in the oven baking, and smelling delicious! Thanks for the great recipe!

These are the best paleo cookies I have made yet! I love the taste and the texture..I am thinking about using the base ingredients and experimenting with other add-in’s like sugar-free cranberries or dates…have you tried anything other than chocolate chips?

I just made these and had the same problem with the runny liquid batter. Not sure how 1 cup almond milk and 1 cup flour wouldn’t turn out runny? Am I missing something here. Anyways, I just added a lot more flour and made them into muffins instead. They were yummy. Fun experiment. Thanks for the idea.

I think when I made them, the type of coconut flour I used soaked up a LOT of liquid- hence the large amount of almond milk.. but I have noticed that coconut flours are NOT made equal and some soak up more, some soak up less liquid.. sorry they didn’t turn into cookies for you but I’m glad you were able to adapt the recipe and made yummy muffins!
