We started the week with Vegan Cookie Dough Ricotta rescuing Monday. We’re ending the week with Chocolate Zucchini Socca stuffed with that Monday rescuer. Kinda like bringing whole the week, and fun recipes, around full circle. So, without further ado, or any more teasing, Friday’s sweet and savory chocolate laden baked meal:

Chocolate Zucchini Socca
[sandwiched with Vegan Cookie Dough Ricotta and drizzled with sweet date syrup]
The socca that changed their life provided me a pretty tasty, filling, and fun recipe to create and share. Recipe adapted from Pure2Raw Chocolate Socca recipe.
Ingredients:
- 1 cup chickpea flour
- 1/4 cup cocoa powder
- 1/4 tsp salt
- 1 tsp cinnamon
- stevia, or sweetener to taste (about 1/8- 1/4 cup liquid agave or honey works nicely)
- 1/2 cup zucchini, shredded
- 1 1/4 cup water or almond milk
- 2 tbsp coconut oil*
Shred the zucchini and place in a large bowl. Combine the rest of the ingredients in with the zucchini and set aside.
Place coconut oil in a spring form pan and place in a 400 degree oven for 2 minutes, heating the coconut oil. (*you could use olive oil, still heating it before pouring the batter into the pan)
When the oil is melted, carefully remove pan from oven and swirl the oil to make sure it coats the whole bottom of the pan. Pour the chocolate socca batter onto the heated oil.
Bake at 400 degrees F for 25-30 minutes, or until the sides of the socca pull away from the pan and the center looks done. You’ll know.
Let socca cool for 10 minutes before slicing into [fun shapes!] triangles and placing a large amount of Vegan Cookie Dough Ricotta (or other fun ingredients- peanut butter would be Heavenly!) on top. Pile on another socca triangle and top with a drizzle of choice. Mine was Organics Are For Everyone Date Syrup.
Your topping could include, more Cookie Dough, maple syrup, cinnamon, Greek yogurt, ice cream, whipped cream, frosting!!, nut butters, chocolate sauce, chocolate chips, kabocha (cause I LOVE it), … you see where this is going. The options are endless.
With whom can you show more unconditional love? I can definitely show myself some extra love. A relaxing night, warm blanket, and a movie await me after work.
